Homemade Muesli

Since I have to leave my house at the crack of dawn, it’s a daily struggle finding a fast and delicious breakfast that will keep me full until lunch. Who wants to choose between having a balanced breakfast and getting a few extra minutes of shut-eye? Well, I have found the solution to this breakfast problem. Prepare a batch of this muesli on Sunday and voila! You’re set for the whole week. Now you may imagine yourself enjoying a bowl of this cereal for a few days and then getting sick of it. Fear not! There are endless ways to enjoy muesli that are just as quick and delicious. Just a few ideas include: with a bit of milk or yogurt and fruit, in place of granola on a smoothie bowl, soaked in milk overnight, or cooked as if it was oatmeal. You can also get creative and switch up the fruit each day. I particularly like shredded green apple to counter the sweetness of yogurt. Another great thing about muesli is you can switch up many of the nuts, seeds, or dried fruit so you won’t get tired of the same combination. Dried mango, dates, walnuts, and macadamia nuts are also great additions. Just keep the amount of oats, nuts, and fruit proportional and go crazy with different combos!

Here’s my favorite:

4 cups oats

1 cup roughly chopped hazelnuts

1 cup unsweetened coconut flakes

¼ cup flaxseed

¼ cup chia seed

½ cup roughly chopped brazil nuts

½ cup whole or very roughly chopped almonds

½ cup dried cranberries

½ cup chopped dried banana chips

½ tablespoon ground cinnamon

Pinch of salt

All you need to do is combine all of your ingredients together and store in an airtight container.

Even my dog wanted some!
