Can’t decide what to make for breakfast? Pumpkin Spice French Toast Waffles (say that 5 times fast) are the best of french toast and waffles plus they incorporate my favorite fall flavors. They are the perfect start to a fall morning and are sure to impress. These were a huge hit in my family and took no time at all to prepare. I topped them with an incredibly simple pumpkin syrup.
4 large eggs
1/4 cup milk
1 1/2 teaspoons vanilla extract
4 tablespoons pumpkin puree plus more for syrup
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon sugar
butter (for waffle iron)
Maple syrup (optional)
In a pie dish or shallow bowl combine eggs, milk, and vanilla. Add pumpkin and whisk until incorporated. Note: there will be some lumps of pumpkin in the batter. Add cinnamon, nutmeg, and sugar and mix until completed combined.
Heat and butter waffle iron. Submerge both sides of bread in batter until the bread has soaked up some of the liquid. Sprinkle both sides with cinnamon if desired. Transfer the bread to the waffle iron. Note: if the iron does not shut all of the way, hold closed for a few seconds. Cook for 3-4 minutes and remove from pan.
To make a delicious pumpkin syrup: simply combine maple syrup and pumpkin puree in a small bowl. Taste and adjust amounts if needed. Microwave until heated through.
Top your french toast waffles with the syrup and a sprinkle of cinnamon. Enjoy!
