A raita is a sauce often made with yogurt, cumin, herbs, and/or vegetables. Unlike American condiments, which make dishes spicier and more flavorful, raitas are used to balance out spicy flavors and cool the palette. It is perfect to pair with spicy curries, vegetables, with warm naan, or with anything that needs a cool and refreshing flavor. I used this raita in my Indian Feast.
I used the recipe from All recipes
1 cup plain yogurt
1/2 large cucumber, grated
10 fresh mint leaves
1/4 bunch chopped fresh cilantro
1 tablespoons ground cumin
salt and pepper to taste
1.Puree the yogurt, cucumber, mint, and cilantro in a food processor. Note: if you are using a mini food processor you may need to blend it a little bit before adding all of the herbs.
2. Add the cumin, salt, and pepper and blend until smooth. Transfer to a bowl, cover, and chill for at least an hour to allow the flavors to incorporate.
